Biscayne Brewing Company

We sat down with Gus Chacon, who, along with fellow co-owner Jose Mallea, will be opening Biscayne Brewing Company in the not too distant future. The brewery will be located on NW 25th Street in Doral, a couple of blocks west of the Palmetto Expressway. There will be a tasting room added to the 15,000 square foot facility shortly after they get the beer flowing.

They are hopeful that they will have their certificate of occupancy by mid-July and will be able to turn Aaron Anderson, their brewmaster, loose on the brand new 15 barrel system. They found Anderson in Colorado and he is far from being a newbie in the business, having worked in brewing positions at Hall Brewing, Bristol Brewing, Renegade Brewing, Gordon Biersch, Molson Coors, Abita, Gordon Biersch, and Breckenridge Brewery.

Initially they will start out with their 1513 Golden Ale and Miami Pale Ale. Chacon said that their core beers are going to be sessionable and suited for Miami's warm climate. He described the Golden Ale as being similar to a German Helles. It'll have a lighter body without sacrificing the flavor. The Miami Pale Ale will be a medium bodied ale with "enough hop bit to satisfy without being overwhelming." We asked about the assortment of barrels adorning their office space and Gus said that they hope to fill some of them in the not too distant future with some of their original batches. He said that there's a Oloroso Spanish Sherry barrel that the plan on aging for a year and tap for their first anniversary.

They'll be adding an IPA, a coffee porter and a cream ale to the mix once they are up and running. Gus said that in addition to their core lineup, we can expect to see some saisons, seasonals and the occasional one-offs.
